The Estate's First Event

This past week, The Estate on Second hosted its very first event. Though the restoration process and renovations are in the beginning stages, we couldn’t wait to open our doors. Before the construction madness fully ensues, we wanted to host an event in The Estate’s beautiful bare state. For this particular evening, we held a fundraiser for Lou Carrera, a former California State Senator and current candidate running a seat on the Orange County Board of Supervisors. Our Event Specialist, Nickie Good, wonderfully planned the details of our first event, and it turned out to be quite the success. 2 The Estate is a spectacular, rich piece of history that has so much to offer. We feel incredibly fortunate that it has become a part of Jay’s story. Even without furniture or permanent décor, the building offered the perfect space for people to eat, drink and mingle with one another.3Without existing lighting fixtures, we opted for the ambiance of bulb strung lights overhead and a few spotlights here and there to highlight various aspects of The Estate’s architecture. We also had small candles lit atop the white linen covered tables. Plus, we scattered a few Estate postcards on each table. 410To compliment the evening’s happenings, Jay’s provided a wonderful selection of beer & wine at the bar. 5Guests were treated to our delicious Tuscan Bruschetta Bar packed with all sorts of amazing toppings and breads including, Spring Pea Hummus, Saffron Tomato & Roasted Peach Confit, Caramelized Maui Onions & Garlic, Sautéed Wild Mushroom Mix, Heirloom Tomatoes and Smoked Asparagus, Shaved Grana Padano Cheese, White Truffle Oil, Fig Balsamic Syrup, Rosemary Olive Baguettes and Ciabatta. 67We also prepared a few tray passed hors d’oeuvres for guests to snack on as they conversed. Our first was Seared Ahi on a Wonton Chip with a dollop of our Wasabi Aioli on top. The second, savory appetizer was our Beef Wellington drizzled with Béarnaise.8For dessert, Jay’s bakery prepared a delectable Fig Mascarpone Tart and our signature Raspberry Chocolate Dessert Shot.119 We had quite the evening and we cannot wait for the amazing events to come at The Estate. Although the space is stunning in all its bare bones, we know that the end result will be that much more magnificent. Kelly + Andrew, The Casino San Clemente

There’s no denying the many perks that come with living in Southern California. For one, the weather is mild enough for almost any occasion at anytime of year. Even in winter, it’s never quite cold enough for the beach to be off limits. Kelly + Andrew recently wed in the charming surf town of San Clemente. After exchanging vows at Our Lady of Fatima Catholic Church, the two headed over to The Casino San Clemente to celebrate with family and friends. The lovely couple asked Jay’s to cater their reception with a plated dinner, wedding cake and bar. Event Specialist, Nickie Good, and Andrea Guzman Gonzalez of LVL Weddings & Events pulled the day's details together perfectly.234The events of this special day were marked by a classic style with subtle nautical touches. Kelly looked absolutely stunning in her sweetheart, mermaid gown and lace-trimmed veil. Her hair was styled by Anna Foschetti and make-up done by Beauty & the Beach. As for the bridal party, the gals were dressed up in deep blue, while the guys were suited up and sporting fun, polka dot ties.5After the ceremony, the newlyweds and the bridal party headed down to the beach to capture some gorgeous shots before the sun set. Kelly + Andrew were simply glowing with excitement as they walked along the sand with their dearest friends. 6Guests were welcomed into The Casino’s Patio of the Stars for cocktails and hors d’ oeuvres. For appetizers, Jay’s served Gorgonzola & Caramelized Onion Bruschetta served on Herb Toasted Baguette, Chicken Empanadas, and Crab Cakes with Mango Papaya Salsa. During this time, guests wandered The Casino grounds, bundled up by the magnificent fireplace, and conversed over drinks while waiting for the bride and groom to arrive.7Once it was time for the reception, guests made their way into the Grand Ballroom for the celebration. Tables were set with a mix of navy and gold accents along with beautiful magnolia and white floral garlands by the talented Sweet Marie Designs.
8For dinner, Jay’s served up two delicious options: Santorini Chicken with Lemon Herb Seasoning, Artichoke Hearts, Sundried Tomatoes, and Fresh Basil or Filet of Beef with a Demi Glaze. Each of these dishes was served with our Grilled Green & White Asparagus and French Baby Carrots. 9The grand party with family and friends ensued with toasts, cheers, a live band, dancing and more. 10 Our bakery made the new Mr. & Mrs. an elegant, three-tiered Chocolate Cake with Vanilla Bavarian Filling and Buttercream Frosting. 11Thank you Kelly + Andrew for letting us play a part in your amazing wedding. That’s right! Ellie's will be adding three amazing breakfast burritos options to the menu this next week. We love our customers, we love breakfast, and we love burritos. So adding these delicious breakfast burritos seemed like the perfect way to say thanks to all of you.

Of course, we couldn’t just add one breakfast burrito. So we came up with three distinctly yummy recipes to help you start your day right, or to shake up your lunch a bit.


One: Bacon & Eggs with Scallions and Pepper Jack Cheese
Two: Chorizo Ranchero & Eggs with Cheddar Cheese
Three: Egg White Scramble, Herbs De Provence, Wild Mushrooms & Spinach with Boursin Cheese

This year has been a whirlwind for our team, we’ve gained a new Executive Chef, started our own video podcast called Eventful, watched Ellie’s thrive in its San Clemente beach community, and decided to open our own exclusive venue in the heart of Downtown Santa Ana. 2In the midst of all this exciting growth and development for the Jay’s brand, we’ve never lost sight of what is at the core of our company: delicious food and quality customer service.This understanding keeps our beloved customers coming back and has lead us to five straight years as Orange County’s Best Caterer. At the end of the day, we know it’s our job to serve you our best and do everything we can to make your event perfect. Malia + Erik, Serra Plaza Wedding

It’s time to showcase another incredible wedding held at Serra Plaza. Malia + Erik recently said “I do” in this magnificent venue tucked in the historic Los Rios District in San Juan Capistrano. The wedding was more than just a ceremony, it was a grand celebration of these two surrounded by a host of family and friends. The couple asked Jay’s to prepare the hors d’oeuvres, dinner, cake, and craft cocktails for the reception. Our talented Event Specialist, Nickie Good, did a wonderful job pulling together the details of the event alongside the talented Viv Milne of 221 by Viv. 2 3The entire evening was full of glamour and elegance. Malia was glowing in her lace and beaded dress as she walked down the aisle during the procession. The bridesmaids dressed in floor-length pastel pink gowns and the men were suited up in gray. Chandeliers and strung lights hung all across the Grand Plaza Courtyard, setting a beautiful ambiance for the festivities.4 As for the rest of the décor, the space was set with lush greenery and pastel florals by mulberry & moss . Gold, candle lanterns lined the aisle of pews that led to the gorgeous fountain backdrop where the two wed.56 After the beautiful ceremony, guests enjoyed cocktails and appetizers on the grounds. The reception tables were decorated with exquisite linens by Designer Specialty Linens. For hors d’oeuvres, Jay’s served up Crab Cakes with Mango Papaya Salsa, Chicken Spring Roll with Ginger Lime Sauce, and Fontina Cheese, Caramelized Onion, Sundried Tomato & Pancetta Flatbread Pizza.10 Once the lovely couple was announced, the exciting reception festivities were underway. Guests were invited to enjoy our gourmet dinner buffet that included our Grilled Marinated Vegetables, Caesar Salad, Zucchini Lime Chicken, Tortellini with Creamy Pesto Sauce, and delicious Mashed Potatoes. 7 For the wedding cake, the couple worked with our bakery to design a spectacular three-tiered cake. Each layer was a different design: the bottom with a textured, cream frosting, the middle with a smooth, metallic gold, and the top layer, a sparkling cream with a gold band to tie them all together. To finish it off, a few flowers were scattered on the layers. 8The rest of the evening was a celebration to remember. After the two’s dearest friends and family gave heartfelt toasts, guests danced and enjoyed our late night Mac & Cheese Station. Congratulations, Malia + Erik! Today in Numbers: Jay's Busiest Day of the Year

Today, Saturday, December 13th, marks the most wonderful (aka the most busy) day of the year for Jay’s Catering. To say that this 24-hour period is a little more demanding than a normal day in the life of Jay’s would be a grand understatement. There are few things we love more than this holiday season. All the gathering of loved ones, the decorations, the beautiful change in weather and of course, the delicious food & warm drinks.

That’s why we love getting to play a part in our customers’ festivities. Instead of laboring in the kitchen for hours to feed a host of guests, Jay’s takes over your holiday meal or event, so that you can enjoy celebrating with friends, coworkers and family. While we love making our clients’ season a little bit brighter and less hectic, this equates to quite the crazy schedule for our team. That being said, we’d like to think that after years and decades of catering holiday parties, Jay’s has come up with a fairly sophisticated system for executing all these feasts and events.

This year, we wanted to give you an inside look into the ins and outs of our complex operation by breaking down the numbers. Today consists of holiday parties, weddings, corporate events and much more. All hands are on deck, ready to make this a successful day for Jay’s, our wonderful clients, and their guests.
