Steve + Emily Wed at The Casino San Clemente
Steve + Emily recently wed at the picturesque venue by the sea, The Casino San Clemente. The couple hired Jay’s to staff + cater their wedding, and our Event Specialist, April Chaim, did a splendid job of organizing the cuisine. The wedding was an intimate affair of 138 guests--made all the more so through the wedding party's personal touches--and full of the charm + glamour of old Americana.The ceremony was held in the Rock Garden.The bride’s father fell terminally ill just a day or two prior to the wedding. So, Emily’s brother walked her down the aisle, while their Dad watched the proceedings on an iPad via Facetime.Lots of tears were shed and the family’s emotion + closeness shone through—truly a special moment.After the ceremony, it was time for Cocktail Hour in the Lounge + on the Patio of the Stars, during which time we tray-passed Crab Cakes with Mango Papaya Salsa hors d’oeuvres. We also set up a hors d’oeuvres station of fresh Crudite and Homemade Chips. Of course, what is Cocktail Hour without the drinks? Jay’s set up an open bar featuring our premium liquor. The couple also designed a signature drink—the “Dirty Shirley”—and it was a big hit with the guests!The mood for the rest of the evening was set in the Grand Ballroom, as everyone joined in celebrating the newlyweds with a Champagne toast after depositing their well-wishes. For dinner, Steve + Emily chose our All-American Buffet, which includes: BBQ Chicken, 16-Hour Smoked Beef Brisket, Caesar Salad, a Mashed Potato Station (Mashed Yukon Gold and Sweet Potatoes with all the fixins’), a Seasonal Fresh Fruit Platter, and Freshly Baked Rolls & Butter. Scrumptious!The décor + design reminded one of an elegant American picnic, with square white plates, Mason jars, and old family photos gracing the space.The breathtaking chandeliers in the Grand Ballroom added a pure element of sophistication, while the delicately potted flowers for the tables and hanging rose arrangements made the wedding endearingly simple + romantic, too—a wonderful combination.When it was time for dessert, guests indulged in our All-American Dessert Station, composed of a decadent selection of: S’more Pops, Old-Fashioned Cookies, Assorted Mini Cupcakes, Petite Fruit Pies, Rice Krispy Pops, & Assorted Gourmet Brownies. It doesn’t get more classic Americana than pie, right?Steve + Emily cut the cake after dinner, as well. We designed a gorgeous (+ delicious) 3-layered, round naked cake. The couple chose White Cake with Strawberry Cream Filling, topped with Fresh Strawberries and displayed on a stunning gold board.For the rest of the night, guests continued sipping on cocktails and dancing. The festivities went on late into the evening, and everyone had a marvelous time celebrating Steve + Emily’s big day.We’d like to thank the newlyweds for allowing us to contribute to making their wedding day the lovely, memorable event it was! Eventful: Designing with Foxtail Florals
Ready to make your week a little bit more Eventful? Good—so are we! This week, we decided to tackle the ever-important + often confusing topic of event design. Nickie Good, our lovely Event Specialist here at Jay’s, took a few moments to chat with Corie, owner of Foxtail Florals, about the ins and outs of event design. Corie is an experienced + skilled industry professional who designs both flowers + events in their entireties. Nickie met up with her at the stunning Giracci Vineyards to sip on fine Giracci wine + ask some insightful design-related questions.Our crew joined Nickie + Corie at Giracci to get the 411 on what it’s like to design events; the process, the triumphs, the challenges, the tips, + the little known facts. Our day at Giracci started right as we entered through the winery’s splendid gates. As we drove down the driveway, old oak trees began casting shadows across the grounds. A rustic horse stable greeted us to the right, while Wishing Well Court’s magnificent gazebo hailed us from the left.
A well-kept horse-riding area marks the center of the property; apropos, since Giracci is a triple threat: Equestrian center, winery, and special event space all in one. Behind the riding arena is Giracci’s Tasting Room + Oak Tree Court, where we met up with Nickie + Corie.
In Oak Tree Court, twinkle lights are wrapped high up the oaks’ mighty branches; both full + halved wine barrels serve as chairs, set askew along the parameter of a gently bubbling fountain. While we visited during the day, it is easy to imagine Giracci alive at night, buzzing with the excitement of a wedding reception. Sweeping trees, flowers, + lush grass surround the venue’s various structures, contrasting with the summer season’s aridity. The aesthetics of the place are at once dazzling and inspiring to an imaginative Designer like Corie.
Corie’s Foxtail Florals is a couture flower + event design company that specializes in using design to make brides’ special days personal to them + their grooms. Corie is all about the details, and when it comes to making her clients’ weddings memorable, she really hits it out of the park. While Foxtail Florals deals largely in creating couture floral arrangements, Corie is also well-versed in other aspects of event design. She uses everything from linens + props to personalized dance floors + custom signage in order to send her clients’ events over the top.

Vintage Glamour at The Loft on Pine
Andie + Dave recently tied the knot at The Loft on Pine. We were absolutely thrilled to staff and cater this stunning couple’s gorgeous wedding. Jay’s expert Event Specialist, Patti Robledo, did a superb job of making sure the couple’s menu + day were perfect for them and their guests.The couple’s intimate wedding of 70 guests was made all the more so because Andie + Dave’s personalities shone through the details.From a leather-bound, twine-wrapped Bible to a sign reading, “MANS 1959 FRANCE”, this wedding was a true example of vintage glamour done perfectly.As guests entered The Loft, they were greeted by a chalkboard door announcing the theme of the affair: “Love is just a word until someone comes along and gives it a meaning”.The ceremony followed on The Loft’s upper tier as soon as the attendees were all present. It was an emotional and moving moment between Andie, Dave, and their friends + family.After the ceremony, everyone found their place cards on chalkboards set atop antiquated furniture.Cocktail hour immediately followed the ceremony, during which we served an abundance of tantalizing tray-passed hors d’oeuvres: Mini Filet & Wild Mushroom Wellingtons with Béarnaise Sauce, Fig, Goat Cheese & Mascarpone Tarts, + Crab Cakes with Mango Papaya Salsa. As guests’ delighted their palettes, they also refreshed themselves at our open Soft Bar.After cocktail hour, it was time for dinner. The tabletops were decorated with vintage, framed postcards, books, and even little crystal lanterns.The simple flowers and candlelight just enhanced the romantic aesthetic tone, further emphasizing the venue’s warm ambiance.For dinner, we prepared a sumptuous buffet, which attendees feasted on after the Champagne & Cider toast.Everyone enjoyed our: Zucchini Lime Chicken, Vegetarian Rotollo Bolzano, Champagne Rice Pilaf, Fresh Green Beans Sautéed with Bacon, Shallots, & Dill; Pear Salad (with Dried Cranberries, Candied Walnuts, Stilton Cheese, + Pear & Balsamic Vinaigrette), + Homemade Brioche Rolls and Assorted Rustic Artisan Rolls with Herb Vegetable-Crusted Butter Medallions. The party was in full swing by the time dessert came around! We prepared a decadent Tropical Dessert Station that tickled guests’ sweet tooth. It consisted of...Mango Dessert ShotsChocolate-Dipped StrawberriesIndividual Pineapple Upside Down CakesTropical Fruit TartsChocolate-Dipped Banana Cream Puffs...+ Light Pink French Macarons with Raspberry Filling. Yum!Dancing and merriment continued late into the evening, and everyone had a wonderfully memorable time. Memorial at The McCharles House
Established in 1885, The McCharles House is a veritable ode to Orange County history + is officially listed in the Tustin Historic Register. Once a family home, it is now meticulously preserved as a tea room, restaurant, + special event space. We had the honor of catering + staffing a Memorial Service last week at the stunning house, which our Event Specialist, Lauren Harper, did a lovely job of coordinating.About 150 people attended the service. The family wanted the event to feel at once intimate + elegant, retaining the formal aspect of the day. The McCharles House was a natural choice, with its organic gardens and vintage Victorian ambiance. It is composed of: The Summerhouse (featuring a wedding gazebo from the Disneyland Hotel), The Sequoia Lodge, The Drawing Room, The Porchside, and The Courtyard. These 5 areas are all interconnected, so that guests can languorously wander around the property without feeling inhibited.For the Memorial, friends + family entered through the welcoming area at the front of the house before walking to the front patio to graze on Jay’s Seasonal Fruits and Crudités. We decorated this station with Reindeer Moss + Wheatgrass before setting it atop stone plates.Adjacent to it was our Beverage Station, comprised of Lemonade, Iced Tea, + Basil-Infused Water.Details like pink roses in vintage, mismatched cups + individually-potted succulents on each of our Navy Blue, linen-draped cocktail tables made for a beautiful contrast with the venue’s overwhelming greenery. The McCharles House feels timeless; like a snippet of history that is alive with trees, flowers, + small shaded enclosures. You truly feel soothed in this unique venue, which makes it an ideal place to gather for a Memorial Service.As the guests progressed to the back of the house, they selected White Peach Sangria + Chardonnay from our Bar. After procuring refreshments, attendees explored The Summerhouse’s gazebo, under which a Classical Guitarist gently strummed his strings.Here, we arranged our Mashed Potato & Mac n’ Cheese Stations, the latter of which included delicious Panko-Crusted Jack, Asiago, and Gorgonzola Mac n’ Cheese.An array of toppings at our Mashed Potato Station, like Applewood-Smoked Bacon + Caramelized Onions, only added to our elevated take on a true comfort food classic. Under The Summerhouse’s gazebo, we also setup our Slider Station, replete with both our All-American Sliders (with Angus Beef on Freshly-Baked Brioche Buns) + our BBQ Chicken Sliders (with Apple Slaw on Mini Hawaiian Rolls).
After everyone enjoyed our savory cuisine, they headed to our Gourmet Dessert Station on The Porchside. For this event, we made a fresh collection of...Mini Lemon Meringue PiesFrench MacaronsPetite Crème BruleesChocolate-Dipped Strawberries...Mini Red Velvet Cupcakes, + Chocolate-Dipped Florentines. We also provided a Coffee Station here to accompany the desserts!For the rest of the afternoon, guests explored the house’s Sequoia Lodge + Drawing Room, which were lately decorated to reflect the brightness of the Summer Solstice. The McCharles House’s décor changes by season, transforming from its natural vintage state into a modern paradise—depending on the wishes of the client. We were truly privileged to be able to cater this elegant service, + sincerely thank the family for allowing us to be a part of it.
