Easter Sunday at Ellie's Table

At Ellie’s Table, we love to celebrate holidays. No matter the occasion, these special days often include two of our favorite things: great food and community with the people we love. As we’ve said farewell to the glorious fall and winter festivities, we’ve looked forward to all that the beauty that this spring season has to offer. 2 Next weekend marks Easter Sunday, and we couldn’t think of a better way to celebrate than offering our customers some delectable specials. So, we will be hosting a delicious, custom omelet bar and serving up endless mimosas all day. In addition to our everyday pastries and goods, we will be offering these special items as well as supplementary seating in The Casino San Clemente’s beautiful West Wing & Patio of the Stars right next door. 3 As far as omelets go, customers will be able to make up their own tasty concoction or choose from our five suggested omelet creations:

Three Cheese Omelet
Fresh cage free eggs gently whisked, cooked to perfection with garden vegetables, white cheddar cheese, Monterey Jack cheese, and goat cheese.

Egg White Omelet
Farm fresh egg whites, Sonoma goat cheese, fresh herbs de Provence, wild seasonal mushrooms, vine ripe tomatoes.

Ellie’s Table Omelet
House smoked salmon, garden vegetables, avocado and crème fraiche.

Southwestern Omelet
Choice of manchaca beef, diced potatoes, Monterey Jack cheese, and a fire roasted salsa tomatillo with poblano chilies & sweet onions.

Meat Lover’s Omelet
Smoked bacon, house made maple chicken sausage, vine ripe tomatoes, white cheddar cheese and Jay’s salsa.

When building an omelet, customers will be to include any of the following fresh ingredients:

Seasoned Pasteurized Egg Mixture / Brown Organic Eggs in the shell / Seasoned Pasteurized Egg Whites Mixture / Shredded Jack cheese / Shredded White Cheddar Cheese / Crumbled Goat Cheese / Fresh Herbs de Provence / Wild Mushroom Mixture / Diced Vine Ripe Tomato / Garden Vegetable Mixture / Avocado / Crème Fraiche / Shredded Manchaca Beef / Fried Diced Potatoes / Roasted Salsa Verde / Jay’s Salsa / Bacon Bits / House Smoked Salmon Pieces / Crumbled Chicken Sausage, Homemade Siracha Sauce, Tapatillo and Tabasco Sauces.5 Omelets will be $10.50 each and Endless Mimosas will be $15.00. And if omelets aren't your thing, or you need an extra bite, we will be serving up our tasty Breakfast Burritos, Homemade Cronuts, Savory Croissants, along with all our regular cafe fare and coffee drinks. Ellie’s will be open normal hours from 7:00am-2:00pm, while The Casino seating areas will be open 8:00am-2:00pm. Also, we will not be taking reservations; seating is on a first-come, first-served basis.4 Come join us for a lovely Ellie’s Easter Sunday by the beach for great food and drinks. Kristen + Phillip, 440 Seaton

We absolutely love our venue partner, 440 Seaton, and the beautiful events they house. Recently, we collaborated with a handful of talented vendors to help make Phillip + Kristen’s wedding a day to remember. The couple asked Jay’s to create a menu that was a perfect fit for their Disney’s UP inspired celebration. Our Event Specialist Hannah Stuber, had the opportunity to organize our first event at this incredible venue and she did an amazing job.2 440 Seaton was built in 1913 to house an indoor lumberyard for a furniture manufacturing company. Still lively today in the vibrant Arts District in Downtown, Los Angeles, much of the original structure has been preserved and the beautiful details restored to reflect their best qualities. Some of these features include exposed brick walls, concrete & wood flooring, saw tooth roof, and a functioning freight elevator.5 The venue provides a sense of eclectic and rustic charm to the culture-centric, artist community. It made the perfect location for Phillip + Kristen to have their creative and playfully themed wedding.34With the ring bearer dressed as Russell, the boy scout, and the flower girl as Kevin, the rare bird, the scene was set to bring in hints of the uplifting animated movie. Kristen and her select bridal party each held large, dreamlike paper flowers that were delicately made by Kristen’s aunt. 6 In the Great Hall, instead of a traditional runner, the aisle was artistically traced in chalk with beautiful patterns and designs by one of the couple’s friends. Simple eucalyptus garland and strings of lights hung down to embellish the atmosphere. The ceremony was light-hearted and romantic. Smiles filled the room with happiness for the couple on their special day.7 For hors d’ oeuvres Jay’s served up Filet & Wild Mushroom Wellington and Fig, Goat Cheese & Mascarpone Tart in the Lounge. 8 The Great Hall was transformed from the ceremony into the reception area. Long rectangular tables draped in white tablecloths lined room. Green accents from the napkins and the greenery around the flowers brought in vibrant hues along with the pink, coral and golden roses. 9 The bridal part had their grand entrance through the freight elevator which was covered in magical colored lights and rows of 1,000 paper cranes that were made by Kristen + Phillip’s family and friends.10 The dinner buffet was simple but delicious with our Pear & Walnut Salad, Zucchini Lime Chicken, Vegetarian Rotolo Bolzano, Garlic Mashed Potatoes, Green Beans with Bacon, Shallots & Dill, and Tri Tip Carvery.11 To finish the night off, the couple cut into a stunning color block tiered cake that had a textured white base, a turquoise layer and coral flowers as the topper. A miniature model of the iconic UP house sat next to the cake for a little extra flare.12 Toward the end of the night, we passed around milk & cookie shots for guests to enjoy. 1314 The night was filled with heartfelt toasts and a marathon of dancing. Draped lights hung above the celebration bringing in a sense of starlight. Congratulations, Phillip + Kristen! A Folksy Floral Shoot with Stephanie Williams

Every so often, Jay’s has the honor of participating in a styled photo shoot. We love these projects because they give us the opportunity to work alongside other vendors in our field to collectively create something beautiful that will captivate and inspire. Recently, the wildy talented photographer, Stephanie Williams, asked us to be a part of a Folksy Floral themed wedding shoot. 23The bride was fitted in two gorgeous, flowing gowns by Love Marley from Love & Lace Bridal Salon. To compliment the dresses, KC Witkamp provided natural and blushed makeup looks along with several brilliant hairstyles that incorporated some of the florals. 45The magnificent greenery and floral arrangements were designed by Peony & Plum. For the idyllic table setup, Found Vintage Rentals set up the rustic dining table and chairs, while Archive Rentals provided the gold cutlery and pretty plates to dress the place settings. 67 To complete the feel, Zenadia Design, created a lovely set of wedding stationary that incorporated similar floral patterns and delicate textures. 8 For the featured dessert and cake, we wanted to tie in the finishes and light qualities of the found in the other accents. We designed a tiered cake, lightly frosted with buttercream and painted rose gold to create a dipped effect. 9 We also made delicious blueberry tarts lightly dusted with powdered sugar that would tie in with the textured blue and pastel hues. 10 This romantic, folksy styled shoot was a success. We had a blast working with such a great group of vendors. Shari + Andy, The Casino San Clemente

We’ve been absolutely loving all the recent weddings at The Casino San Clemente. Even though they are all held at this one, spectacular space, each celebration has its own character and special sentiment. This quality is a true testament to what a great wedding venue should be: a welcoming and interesting place that is able to transform beautifully with each type of event that comes. Shari + Andy wed at The Casino in front of their family and friends. The couple asked Jay’s to cater their cocktail hour, dinner meal, and dessert. Our Event Specialist, April Chaim, did an awesome job of arranging the day’s details alongside Pop The Champagne event coordinators. 23The ceremony took place out back in the scenic Rock Garden in front of the venue’s historic, brick fireplace. 4The stunning bride was grinning from ear to ear as she walked down the aisle in her dreamy, sweetheart gown, draping floral veil and bright, scarlet heels. 5As for décor, the grounds were adorned with beautiful florals and greenery, from the garland across the mantle to the bouquets to the table eucalyptus, wreath centerpieces at the reception. The atmosphere of the day was perfectly casual and specific to Shari + Andy’s taste with an eclectic mix of retro and classic California styles. Deep shades of red, blushed pinks, and muted greens added bright pops of color against the neutral backgrounds. 689After vows were exchanged, guests headed to the Patio of the Stars for cocktails while the bridal party took to the shore to snap some breathtaking pictures before sunset.7Guests enjoyed drinks from the bar and mingling out in the open air before going into the reception. For hors d’oeuvres, we served up two of our tasty bites: Thai Vegetable Spring Rolls with Ginger Sauce and our Crab Cakes with Mango Salsa.10For Dinner, we served a fresh Pear & Walnut Salad alongside our delicious sides of Red Roasted Garlic Mashed Potatoes and Green Beans with Bacon, Shallots & Dill. Our main dish was Jay’s Chicken Mastroianni with Apple-Nut Stuffing topped and a Bing Cherry Sauce. The couple also included our signature Mac and Cheese Station to fulfill the evening’s snacking needs. 1112Of course, we couldn’t forget the dessert. Instead of serving cake to their guests, the two had our American Dessert Station equipped with all things sweet: S’more Pops, Old Fashioned Cookies, Petite Fruit Pies, Rice Krispy Pops, Assorted Gourmet Brownies, and Chocolate Dipped Cream Puffs. The rest of the night was filled with heartfelt and humorous toasts, cutting the cake with a saw, getting groovy on the dance floor, and celebrating such a wonderful union.

Clark Construction Group's ARTIC Dinner

As much as we love working on weddings, we also really enjoy catering corporate events. Each occasion looks entirely different and the subject of celebration often varies, making our job an exciting challenge. After all, there are few aspects of our job that we love more than planning a menu that’s fit for our customers’ personalities and event style. One of our more recent corporate events was a dinner for Clark Construction Group. The company asked Jay’s to serve hors d’oeuvres, drinks, a plated meal, and of course, an array of delicious desserts. Our Event Specialist, Hannah Stuber, took care of the planning and details of the evening wonderfully. 2 The dinner was held at the newly built Anaheim Regional Transportation Intermodal Center, better known as ARTIC. This magnificent structure is situated right between the Honda Center and Angel’s Stadium. As a premiere transportation hub, ARTIC offers a host of transit options and unexpected features, including dining, retail and entertainment. Yes, the glass dome building is a spectacular sight, but it’s more than an architectural gem. ARTIC’s intent is to redefine the way Southern Californian’s travel by including unexpected amenities. This space boasts specialty eateries, small businesses, Wi-Fi, community space, and of course, quality bike racks. 34For this event, ARTIC was not just an amazing venue chosen at random. Clark Construction
was actually responsible for building the center. What better way to celebrate the end of a successful project than by throwing a party in the structure your own team developed?
567 Guests were invited to mingle, snack on small bites, and grab a drink from our premium bar during cocktail hour. For hors d’oeuvres, we served three of our staple appetizers: Filet & Wild Mushroom Wellington with Bearnaise Sauce, Thai Vegetable Spring Rolls with a Ginger Sauce, and Crab Cake with a Mango Papaya Salsa. 8 We wanted to create a special dinner experience for this group of talented individuals. Although this gathering was on a larger scale with almost 250 guests, that didn’t stop us from preparing gourmet and dynamic meal. First was our Pear Salad with Mixed Greens, Sliced Asian Pears, Aged Stilton Cheese, Candied Walnuts and a Pear White Balsamic Vinaigrette. 9For the main course, guests were served Roasted Filet of Beef Chimichurri and Agave Glazed Salmon. And for those who requested our Vegetarian Option Plate, we prepared our Grilled Vegetable Tower made with Zucchini, Yellow Squash, Eggplant, Portabellito Mushroom, and Caramelized Onion Marmelade. Both entrees were served with Dauphine Potato with Boursin + Herbs along with Heirloom Carrots wrapped with white and green asparagus veggie ties. 10 While everyone enjoyed their meal, leaders of the company spoke and the employees viewed a video outlining the details of the entire project. 1112To finish the night, the company brought in a live band to play, while everyone danced and enjoyed sweets from our Classic Dessert Station. This table included a variety of goodies, including French Macarons, Chocolate Dipped Cream Puffs, Mini Coconut Capped White Bavarian Cupcakes, Chocolate Florentines, Fresh Fruit Tarts, and Dessert Shots. 13Thank you Clark Construction for letting us be a part of this wonderful event. The Estate's First Event

This past week, The Estate on Second hosted its very first event. Though the restoration process and renovations are in the beginning stages, we couldn’t wait to open our doors. Before the construction madness fully ensues, we wanted to host an event in The Estate’s beautiful bare state. For this particular evening, we held a fundraiser for Lou Carrera, a former California State Senator and current candidate running a seat on the Orange County Board of Supervisors. Our Event Specialist, Nickie Good, wonderfully planned the details of our first event, and it turned out to be quite the success. 2 The Estate is a spectacular, rich piece of history that has so much to offer. We feel incredibly fortunate that it has become a part of Jay’s story. Even without furniture or permanent décor, the building offered the perfect space for people to eat, drink and mingle with one another.3Without existing lighting fixtures, we opted for the ambiance of bulb strung lights overhead and a few spotlights here and there to highlight various aspects of The Estate’s architecture. We also had small candles lit atop the white linen covered tables. Plus, we scattered a few Estate postcards on each table. 410To compliment the evening’s happenings, Jay’s provided a wonderful selection of beer & wine at the bar. 5Guests were treated to our delicious Tuscan Bruschetta Bar packed with all sorts of amazing toppings and breads including, Spring Pea Hummus, Saffron Tomato & Roasted Peach Confit, Caramelized Maui Onions & Garlic, Sautéed Wild Mushroom Mix, Heirloom Tomatoes and Smoked Asparagus, Shaved Grana Padano Cheese, White Truffle Oil, Fig Balsamic Syrup, Rosemary Olive Baguettes and Ciabatta. 67We also prepared a few tray passed hors d’oeuvres for guests to snack on as they conversed. Our first was Seared Ahi on a Wonton Chip with a dollop of our Wasabi Aioli on top. The second, savory appetizer was our Beef Wellington drizzled with Béarnaise.8For dessert, Jay’s bakery prepared a delectable Fig Mascarpone Tart and our signature Raspberry Chocolate Dessert Shot.119 We had quite the evening and we cannot wait for the amazing events to come at The Estate. Although the space is stunning in all its bare bones, we know that the end result will be that much more magnificent.
