Nickie + Uriel, The Estate on Second
On May 28, 2016 at The Estate on Second, we celebrated a very special wedding day. Nickie and Uriel Loaeza have both been a huge part of the Jay’s Catering family, and we couldn’t be happier for the two of them! Their gorgeous day was put together by Wedding Planner Andrea Gonzalez and Jay’s Event Specialist Emily Anderson.
Nickie and her bridesmaids got ready in our Bridal Suite (which matched the Bride’s theme so brilliantly). Hair and Makeup was done by Beauty and the Beach and Kelsey Ring. The whole wedding party looked gorgeous in their blue and grey hues, making our lovely bride stand out even more in her gorgeous blushing gown. Their white and green floral arrangements and bouquets were all created by French Buckets and their vintage decor was beautifully planned by Sundrop Vintage.
Being one of our amazing Chef’s, Uriel designed a menu for his wedding that his guests would never forget! For hors d’oeuvres, we served Shrimp and Fish Ceviche Tostadita, Mini Sopes with Pork Verde, Esquites street corn and a delicious Taco Station with Mini Pollo Asada and Al Pastor Tacos on fresh corn tortillas.
At dinner, we served Uriel's Ensalada Las Mesas; a frisee and arugula salad with shaved radish, red onion, paprika candied pepitas, sharp cotija cheese and blue agave lime vinaigrette. For the main course we served a dual entrée of Chilean Sea Bass with garlic beurre blanc and a Filet Mignon with chile colorado demi glaze. We paired these with cilantro pasilla rice, onions, pasilla chiles and mini bolillos with savory Mexican compound butter.
The party didn’t stop there! For dessert they had a delicious two-tiered carrot and red velvet Wedding Cake with a cream cheese filling. They also had hibiscus and horchata French Macarons, mini Pan Dulces, mini Mexican Wedding cookies and fresh (fried on-site) Churros, served with vanilla ice cream, raspberry compote, chocolate ganache and Mexican caramel.
While the dancing and celebrations began, VOX DJ’s provided the music and photobooth entertainment. For drinks, we served a Coffee Station with Mexican hot chocolate and Starbucks coffee with whipped cream, chocolate shavings, cinnamon, Kahlua, Bailey’s and Amaretto. The couple also had their own signature drinks, a “Call Me Old Fashioned” with Bulleit bourbon, orange zest simple syrup and bitters, and a “Livin’ la Vida Margarita” which included Casadores tequila, pineapple agave syrup, crushed pineapple, sliced jalapeno, lime juice and Grand Marnier!
Then the happy couple left the wedding in style in a classic Mustang, by Classic Mustang Rentals. We couldn’t be happier for Chef Uriel and Nickie Loaeza! We want to give a special thanks to Wedding Photographers Brian Egan Photography and Erin Patterson, and Videographer Andrew Worley.
Tim + Samantha, The Casino
The Morrissey’s celebrated their love and tied the knot on June 3, 2016 at The Casino in San Clemente, California! This classic wedding was beautifully put together by wedding planners All in the Detail Design, Jay’s Catering Event Specialist Brittany Klein, Crown Five Entertainment, Hair and Makeup by Hikari Murakami and all beautifully shot by Ty French Photography.
Samantha and Tim (the Bride and Groom) along with their wedding party got ready for their big day on location at The Casino and were in need of a snack to hold them over until the reception! The couple ordered special hors d’oeuvres for each room. The Bride had our delicious Turkey Focaccia Sandwiches, grapes, and Mini Layered Basil Tortes with crackers. The Groom enjoyed our Turkey and Ham Hoagies.
As the guests arrived, they were invited to snap a polaroid and sign the cute guest book for the lovely couple! Then they were seated for the ceremony, which was absolutely beautiful with a gorgeous floral backdrop created by their florist Studio C Florals.
Afterwards, Tim, Samantha and their party took some gorgeous photos at the beach while their guests were welcomed onto the patio for hors d’oeuvres and drinks. We served our famous Filet & Wild Mushroom Wellingtons with bearnaise sauce, Chicken Spring Rolls with peanut sauce, and a huge Cheese Tray of brie, gouda, port wine & sage derby, pepper jack, havarti and mustard seed ale with crackers!
When the Wedding Party returned, they brought the party with them, and the newlyweds got out onto the dance floor for their first dance together as husband and wife! DJ Wayne Thompson provided the entertainment for the rest of the evening.
For the main course, we served our Classic Buffet menu with Santorini Chicken, a grilled chicken breast in lemon sauce with artichoke hearts, sundried tomatoes, capers and fresh basil. We also served Tortellini with Creamy Pesto Sauce, Gourmet Mashed Potatoes, Grilled Marinated Vegetables and Caesar Salad with fresh baked rolls & butter.
To round out this classic style wedding, we served our Classic Dessert Station which is a selection of Traditional French Macarons, Raspberry Chocolate Decadence, Fresh Fruit Tarts, Vanilla Bean Chocolate Eclairs and French Apple Tarts.
The Morrissey’s ended the night with some time honored traditions like cutting the wedding cake and the bouquet and wedding garter toss. Our bakery, Ellie’s Table, created a beautiful three-tiered White Cake with raspberry crème filling and a french buttercream icing topped with gorgeous flowers by Studio C Florals.

Angele + Jeffrey, The Estate on Second
Angele and Jeffrey Black had a blast on their wedding day at The Estate on Second on July 16, 2016! The couple wanted to keep it entertaining and lively with a dash of romance. Their wedding coordinator, Annika Romo, helped them achieve this. From the dazzling floral arrangements to the fun games throughout the night, the Black’s made sure to have the time of their lives!
The beautiful bride Angele started her day getting ready with her bridesmaids in the Bridal Suite. The groom and his groomsmen got ready upstairs in The Attic. Lanterns, candles and gorgeous florals draped the runway. The ceremony was held in the grand Crystal Ballroom in front of all of their loving family and friends.
After the ceremony, guests were invited into The Attic for hors d'oeuvres and drinks. Our Event Specialist, Casey Golding, helped the bride and groom choose their menu for the night as well as their set up at The Estate. For small bites, we served Gloria’s Caramelized Bacon Wrapped Mini Franks and Buffalo Chicken Wings with a Bleu Cheese Dip! (Yes… that tastes as amazing as it sounds!)
For dinner the newlyweds chose our all time favorite, the All-American Station which includes Smoked Beef Brisket and St. Louis Pork Ribs! On the side, we served a light Mint Fruit Salad and Creamed Corn. But, that’s not all! The guests also got to DIY their Panko Crusted Three-Cheese Mac and Cheese with a wide array of delicious toppings like Applewood Smoked Bacon, Sliced Mushrooms, Italian Sausage, Crunchy Onions and Sundried Tomatoes.
At our All American Dessert Station we served up a collection of S’more Pops, Fresh Fruit Crostatas, Old Fashioned Cookies, Rice Krispy Treat Pops and Mini Rocky Road Cupcakes.
We want to give a special thanks to the wedding videographer Theater 10 Wedding Films, and to Waveform Events for their DJing and lighting at the wedding and lastly to wedding photographer Alyssa Armstrong for these amazing photos of the day!
Taste of Jay’s at The Estate on Second
Here we are at The Estate on Second for another Taste of Jay’s Event where we invite all of our future brides, grooms, event coordinators and more to taste the different flavors that Jay’s has to offer for your event!
This Taste of Jay’s was special because we teamed up with the fresh Indian taste-makers of ADYA, located at the Packing District in Anaheim, CA. We’re excited to be able to offer this new choice as part of our catering menu to bring more diverse and enticing food options!
Chef Shachi Mehra, the creative mind behind ADYA, wants to serve you fresh and flavorful Indian street food. Her contemporary spin on classics like Tandoori Chicken and her Bombay Style Sliders are just some of the interesting, delicious dishes you can choose from!
At Taste of Jay’s, Chef Mehra brought her Tangy Semolina Shells, Crab Bhel Puri, and her most delicious Pav Bhaji and Keema Pav Bombay Sliders.
As for the rest of the food options that evening, we had our most popular stations on display: Tuscan Bruschetta, Chicken, Mashed Potato & Mac and Cheese Bar, Pasta, Flatbread, Carvery, Poke, Tacos, Sliders, Hors d’oeuvres and of course a Dessert and Craft Cocktail Bar! At our dessert station we had everyone’s favorite... our prized Kouign Amann, a buttery light pastry with a crème brûlée filling that is glazed to perfection!
We want to give a special thanks to our vendor partners who brought this event together with their beautiful contributions. French Buckets Florist created a marvelous space with their gorgeous flower decorations. Sundrop Vintage provided their elegant vintage furniture and VOX DJ’s kept the music going all night long to entertain our guests!

We want to give a huge thanks and congratulations to our very amazing Cook, Ricardo Barragan on his retirement today after an outstanding 30 years of service here at Jay's Catering!
Ricardo started with us in 1986 with a passion for his work and food, and he has loved every second of it! He is an incredible employee here at Jay's and we're going to miss him!!
He has always said "God placed Jay’s on my path in life, and it has been a true blessing."
He truly has a passion for his work and we love him very much for being with us! We have been blessed by his many years of service and the passion he brought every day. Thank you Ricardo!
Paige + Josh, The Estate on Second
The Hofherr’s Wedding at The Estate on Second was a beautiful, asymmetrical masterpiece. The bride, Paige, is a huge fan of asymmetry and wanted to incorporate it into the fine details of her wedding day, which the wonderful K. Sage Events helped coordinate and design to make her dream a reality!
Starting with the details, Paige and Josh created their own wooden signs that were used throughout the venue. Floral Fete created the most charming cascading pageant-style bouquet and the Bride mixed triangular menu cards with her tabletop design to play against the circular plates.
After the vows and the speeches, our team jumped into action and served the hors d’oeuvres. Our Event Specialist Hannah Stuber helped the happy couple plan the catering and venue, and they started with small plates of Crab Cakes, Chicken Spring Rolls and a Bruschetta bar with all of our delicious fixings. Then we enjoyed the newlyweds very first dance together; one of the bride’s favorite moments from the day as it ended in laughter and cheers after a spinning move resulted in the bride’s hair becoming attached to her new husband’s cuff links!
At dinner we served a delightful Mango Papaya Chicken with Stir Fry Veggies, Spicy Wasabi Mashed Potatoes and a Wild Cherry Salad with Fresh Baked Rolls and butter on the side.
Our favorite part of their night, and a nice personal touch to their wedding day, was the cake cutting. Next to the cake the sweet couple had photos of their parents and grandparents cutting their own wedding cakes. Paige and Josh really wanted to incorporate family to show a legacy of love on their love-filled day. For their wedding cake, we created a 3-tiered Marble Cake with a decadent Chocolate Bavarian Filling and a French Buttercream Icing.
