ABC-OC All Member Meeting at The Estate on Second
On March 9, 2016 The Estate on Second held one of it’s most charming and empowering events of the year thus far.
Coordinated by (one of our favorites) Green Apple Event Co., the evening began upstairs with a cheeky cocktail hour. As lively ABC-OC members mingled over clinking glasses, live music by Undercover Live created the ambience.
ABC-OC, Association of Bridal Consultants - Orange County, is the oldest and largest training organization for wedding professionals in the world. Since 1955 they have cultivated over 4,000 members and are continuing to educate, train and create wedding miracles in not only all 50 states but 27 countries.
After cocktails and delicious hot paella, the evening continued as the ABC Orange County members headed down stairs for some amazing food, mesmerizing decor and music by Vox DJs. The brick walls were illuminated with The Estate On Second’s elegant chandeliers and rustic western chic aesthetic. The event design also featured farm tables topped with shabby centerpieces, cozy candles and succulents.
As the Orange County Branch has instilled a foundation built on education and philosophy, ABC-OC came together not just for a typical mixing and mingling event, but an event with a strong message.
As the group took their seats, Jasmine Star took the stage, a woman who is not only an international wedding photographer but a branding and marketing strategist for creative entrepreneurs. As she began her speech, she vowed to K.I.R., “Keep It Real.” Star kept her speech real and true as she encouraged the group to follow their dreams and turn creative ideas into creative actions.
Finally, Jay’s created a custom menu that did not disappoint. A grand buffet of mouthwatering food including, Ensalada Las Mesas, Esquites, Tequila Lime Chicken and even Filet Mignon Carvery served with Argentinian Chimichurri and charred three onion sauce. Jay’s also provided a dessert station featuring a selection of Horchata, Mexican Hot Chocolate, and Hibiscus macrons.
Across the board, it was a night of beautiful scenery, delicious food and inspiring people. The Estate On Second was so thrilled to have ABC-OC and as they say... a little party never hurt nobody!

It Takes A Village
Jay’s Catering has a lot going on these days. Whether it’s at a wedding at The Estate on Second, breakfast at Ellie’s Table or any of the other events we cater, we’re constantly striving to create exceptional food experiences for our guests. To make this happen, we have an amazing team of people who are the backbone of the Jay’s Catering family. So, to make sure they know how much we love them, we decided to throw them an employee appreciation party in the way that only Jay’s can!
Under the big tent, our team and their families were invited to have some fun, connect with one another and, most importantly, eat some great food!
To prime the appetites of our partygoers, we featured our Esquites Station with flame grilled corn, whipped butter, cayenne peppers, valentina sauce and cotija cheese! Our unique Mexican Fruit Cup Station offered fresh cut pineapple, coconut, jicima, papaya and mango with a lime wedge garnish for good measure.
Moving into the main course, team members stopped by the Taco Station where they chose from fresh Mahi Mahi, delicious Carne Asada and tasty Al Pastor with all the toppings. But, we wanted to do something a little different as well, so Chef Peter set up the Whole Pig Station where he cooked up… a whole pig!
Finally, the dessert stations were the perfect way to end this amazing meal experience! With a Popcorn Station, a Churro Station and an Ice Cream Sundae Station (with all the toppings, of course), the kids in attendance were very satisfied! (Okay… the adults were as well!)
You may have noticed that our team members were dressed up as Super Heroes. Well, that’s because we wanted to have some fun appreciating our super employees and their families! You might laugh… but we had fun!
At the end of the day, after playing games, winning prizes and eating a lot of fantastic food, we went home happy and proud to be a part of the Jay’s Catering family!
Clark Construction Group's ARTIC Dinner
As much as we love working on weddings, we also really enjoy catering corporate events. Each occasion looks entirely different and the subject of celebration often varies, making our job an exciting challenge. After all, there are few aspects of our job that we love more than planning a menu that’s fit for our customers’ personalities and event style. One of our more recent corporate events was a dinner for Clark Construction Group. The company asked Jay’s to serve hors d’oeuvres, drinks, a plated meal, and of course, an array of delicious desserts. Our Event Specialist, Hannah Stuber, took care of the planning and details of the evening wonderfully. The dinner was held at the newly built Anaheim Regional Transportation Intermodal Center, better known as ARTIC. This magnificent structure is situated right between the Honda Center and Angel’s Stadium. As a premiere transportation hub, ARTIC offers a host of transit options and unexpected features, including dining, retail and entertainment. Yes, the glass dome building is a spectacular sight, but it’s more than an architectural gem. ARTIC’s intent is to redefine the way Southern Californian’s travel by including unexpected amenities. This space boasts specialty eateries, small businesses, Wi-Fi, community space, and of course, quality bike racks. For this event, ARTIC was not just an amazing venue chosen at random. was actually responsible for building the center. What better way to celebrate the end of a successful project than by throwing a party in the structure your own team developed?
Guests were invited to mingle, snack on small bites, and grab a drink from our premium bar during cocktail hour. For hors d’oeuvres, we served three of our staple appetizers: Filet & Wild Mushroom Wellington with Bearnaise Sauce, Thai Vegetable Spring Rolls with a Ginger Sauce, and Crab Cake with a Mango Papaya Salsa. We wanted to create a special dinner experience for this group of talented individuals. Although this gathering was on a larger scale with almost 250 guests, that didn’t stop us from preparing gourmet and dynamic meal. First was our Pear Salad with Mixed Greens, Sliced Asian Pears, Aged Stilton Cheese, Candied Walnuts and a Pear White Balsamic Vinaigrette. For the main course, guests were served Roasted Filet of Beef Chimichurri and Agave Glazed Salmon. And for those who requested our Vegetarian Option Plate, we prepared our Grilled Vegetable Tower made with Zucchini, Yellow Squash, Eggplant, Portabellito Mushroom, and Caramelized Onion Marmelade. Both entrees were served with Dauphine Potato with Boursin + Herbs along with Heirloom Carrots wrapped with white and green asparagus veggie ties. While everyone enjoyed their meal, leaders of the company spoke and the employees viewed a video outlining the details of the entire project. To finish the night, the company brought in a live band to play, while everyone danced and enjoyed sweets from our Classic Dessert Station. This table included a variety of goodies, including French Macarons, Chocolate Dipped Cream Puffs, Mini Coconut Capped White Bavarian Cupcakes, Chocolate Florentines, Fresh Fruit Tarts, and Dessert Shots. The Estate's First Event
This past week, The Estate on Second hosted its very first event. Though the restoration process and renovations are in the beginning stages, we couldn’t wait to open our doors. Before the construction madness fully ensues, we wanted to host an event in The Estate’s beautiful bare state. For this particular evening, we held a fundraiser for Lou Carrera, a former California State Senator and current candidate running a seat on the Orange County Board of Supervisors. Our Event Specialist, Nickie Good, wonderfully planned the details of our first event, and it turned out to be quite the success. The Estate is a spectacular, rich piece of history that has so much to offer. We feel incredibly fortunate that it has become a part of Jay’s story. Even without furniture or permanent décor, the building offered the perfect space for people to eat, drink and mingle with one another.Without existing lighting fixtures, we opted for the ambiance of bulb strung lights overhead and a few spotlights here and there to highlight various aspects of The Estate’s architecture. We also had small candles lit atop the white linen covered tables. Plus, we scattered a few Estate postcards on each table. To compliment the evening’s happenings, Jay’s provided a wonderful selection of beer & wine at the bar. Guests were treated to our delicious Tuscan Bruschetta Bar packed with all sorts of amazing toppings and breads including, Spring Pea Hummus, Saffron Tomato & Roasted Peach Confit, Caramelized Maui Onions & Garlic, Sautéed Wild Mushroom Mix, Heirloom Tomatoes and Smoked Asparagus, Shaved Grana Padano Cheese, White Truffle Oil, Fig Balsamic Syrup, Rosemary Olive Baguettes and Ciabatta. We also prepared a few tray passed hors d’oeuvres for guests to snack on as they conversed. Our first was Seared Ahi on a Wonton Chip with a dollop of our Wasabi Aioli on top. The second, savory appetizer was our Beef Wellington drizzled with Béarnaise.For dessert, Jay’s bakery prepared a delectable Fig Mascarpone Tart and our signature Raspberry Chocolate Dessert Shot. We had quite the evening and we cannot wait for the amazing events to come at The Estate. Although the space is stunning in all its bare bones, we know that the end result will be that much more magnificent. Homefront America's Heroes Night Out Dinner
Homefront America is a volunteer outreach, non-profit organization that supports military families. In 2005, Arthur Hasselbrink + Mamie Yong Maywhort founded Homefront with a mission of honoring those who courageously defend our freedoms and serving their families with quality care in times of need. The organization runs programs for military children, hosts holiday events and distributes donated supplies. Each year, they hold a “Heroes Night Out” event to give back to military families. This year’s festivities were held at the stunning Serra Plaza in San Juan Capistrano. Jay’s was selected to prepare dinner, drinks + dessert for the 400 guests. Our Event Specialist, Patti Robledo, coordinated the cuisine + made sure that every detail fell into place beautifully. It was a night to be remembered, full of sincere camaraderie + entertainment. Families were invited to take pictures at the photo booth, enter a raffle for an assortment of prizes + mingle with others. Before the meal, Color Guards and the 1st Marine Division Band from Camp Pendleton performed for the gathering. The whole event was woven together with a spirit of patriotism and appreciation. Heartfelt speeches and awards were also given during this time. For the meal, Jay’s served up traditional Italian cuisine buffet style. We offered our homemade Italian meat lasagna, vegetarian lasagna, meatballs, caesar salad + freshly baked dinner rolls. These classic menu items were intended to conjure up a sense of comfort and home.Jay’s provided an assortment of drinks at the bar. We also crafted five special cakes to honor the men + women that have served our country. Each one was decorated with a different branch seal, representing the Air Force, Army, US Coast Guard, Navy + Marines.
After the sun had set, the grounds were brilliantly lit by strung lights overhead. Segerstrom Center for the Arts concluded the celebrations with a comedic, musical show. After all, Heroes Night Out is all about giving guests a chance to leave their stresses at home and enjoy a cheerful time with loved ones.

Celebrate Recovery's West Coast Summit Conference
This past week, Jay’s took on one of its most prominent events of the year: Saddleback Church’s Celebrate Recovery Annual West Coast Summit. This year’s summit included over 3,000 participants, all gathering together for three days of training and fellowship. For Jay’s Catering, this meant preparing over 9,000 meals for the volunteers and attendees. Let’s just say, organization and preparation were key.Days before the summit, our Jay’s Catering headquarters looked more like a hive of diligent worker bees than an office and kitchen space. At times, over 60 people packed into the kitchen, which was in operation 24 hours a day during the preparation period.
Shellie Brison, Stephanie Kearns, Claudio Loyola and Kiko Lazos had the task of making sure every detail went according to plan. With much help and coordination from the entire Jay’s team, we were able to make the event a smooth success. At the client’s request we prepared breakfast, lunch, mid morning and afternoon snacks each day accompanied by an end of the week BBQ on Friday. With this challenge, we also had to provide variety with vegetarian and gluten free options at each meal.
Though the West Coast Summit was considerably larger than our typical events, our focus was to not compromise our signature Jay’s quality due to our increase in mass production. The items in each meal, boxed lunch, and snacks were made in-house with fresh ingredients and great attention to detail.
For breakfast each day, guests could choose between a sweet, freshly baked pastry, like cinnamon or pecan rolls created by our French Pastry Chef Jean Christophe Milon, Gina’s Apricot Oatmeal Bar, a gluten free blueberry scone or a gluten free caramelized pineapple coconut bar.
Daily box lunches were a gourmet and hearty spin on our elementary school days. Three delicious options were offered each day, ranging from our Turkey Focaccia to our Gluten Free Chinese Chicken Salad to our Grilled Marinated Vegetables with Hummus & Pita Bread. Each box lunch included a side salad, fresh fruit or a homemade baked treat from Jay’s.
To keep the summit attendees sustained throughout the long days, Jay’s offered a morning snack between meals and freshly baked cookies during the afternoon break, including a gluten free chocolate chip cookie.
On Friday evening, Jay’s wrapped up the summit with a good old-fashioned barbecue. We grilled up hot dogs and burgers for everyone while they shared their experiences of the summit over dinner. To complete the backyard BBQ feel, we served pasta salad and baked beans for sides.
The late nights and early mornings were definitely worth the joy of this experience. We cherish the opportunity to serve such a wonderful group of people. Thank you Saddleback Church + Celebrate Recovery for trusting us to feed your guests.
